Within minutes of arriving at Omnom Chocolate for our recent In The Field trip, I was already back of house where they make their products, pouring chocolate into molds and trying out different flavor combinations. Omnom co-founders Óskar Þórðarson and Kjartan Gíslason had invited me, along with 17 Whole Foods Market Culture Champions, to design our own recipes at their Chocolate Bar. I’ve seen a lot of chocolate operations, but getting hands-on experience with Omnom’s artisan-quality product was something special. And the distinctive process starts long before the bar-making stage: Omnom gets its chocolate directly from farms in Madagascar, Tanzania and Nicaragua, sustainably sources its sea salt in Iceland and draws its milk from 700 small dairy farms, all of which make use of the country’s robust hydroelectric and geothermal energy sources. I’m so grateful to have witnessed part of this process firsthand with our Team Members.
