[otel/darwin]: Enable cpu and disk hostmetrics scrapers

What does this PR do?

Enables the cpu and disk hostmetrics scrapers in Darwin's host OTel configurations.

Why is it important?

• Aligns linux and darwins hostmetrics configurations and fixes Kibana's Hosts curated UIs for Darwin hosts.
• CGO is no longer needed for cpu/disk scrapers: [chore] [receiver/hostmetrics] Update documentation to remove Mac exclusion for disk and cpu open-telemetry/opentelemetry-collector-contrib#41513
