How to Unlock Outfits and Costumes in Mario Kart World
Mario Kart World's many character outfits and costumes can all be permanently unlocked by picking up food powerups, known officially as Dash Food, while driving in both traditional Grand Prix Races, Knockout Tours, and while in Free Roam.
These Dash Food power-ups appear bright orange, and during races, they are typically found outside Yoshi-themed eateries and restaurants located along the sides of the track. These are special power-ups that closely resemble Item Blocks.
Each of the Food Bags is usually regionally themed, and contains different tiers that provide speed boosts (the bigger the food platter, the larger the boost), and will transform your chosen character into a new outfit.
Depending on the regional food, your character will gain a different outfit that is often related to that region. However, since not all characters have the same amount of unlockable outfits, not all Food Bags will unlock the same type of outfit across characters, and some may only provide a speed boost. Creatures like Goombas, Cows, and Dolphins also cannot gain Outfits, and only get speed boosts from Food Bags.
With all that said, Outfits themselves are purely cosmetic. Once you've unlocked them, they'll become permanently available, and you can freely swap between them at any time via the Character Select Screen.
Important Tip: How to Farm Outfit Unlocks
As we've mentioned, certain foods can be used to unlock outfit variations for multiple characters. For example, Tire Donuts can be picked up and consumed by Mario, Luigi, Peach, and Yoshi to unlock their All-Terrain and Pro Racer outfit variants.
So, with this in mind, it's possible to essentially farm outfits by visiting food vendor locations, consuming the food, and then immediately switching characters (which is seamless and requires no load times) via the Change Character option in the Free Roam menu.
Simply rinse and repeat, and you'll have all character outfits unlocked in no time at all.

How to Disable Outfit Transforms
In the Settings menu, you'll also find an option called "Dash Food" that allows you to disable Transforms, which prevents outfit-swapping when collecting a Dash Food power-up.
